Vegan & Gluten Free Funnel Cake

A nationwide staple at the fair is funnel cake! It's warm, crispy, and always sprinkled with powder sugar! But who would've thought it possible to make a Vegan and Gluten Free version that's just as delicious? Well it's definitely possible and here's my recipe!

Quick Notes:

  • My funnel cake came out a little rugged because I didn't have a proper squeeze bottle for the job. You can use a funnel like I did, but if you have the ability to, I highly suggest purchasing a wide top squeeze bottle which usually go for about $3, but I've even seen them at the dollar store. They still come out just as delicious without one though!

Ingredients:

For the Funnel cake

  • 1/2 cup gluten free all purpose/measure for measure flour

  • 2 tbsps granulated sugar

  • 6 tbsps plant milk

  • 1 tsp ground flax + 3 tsps warm water (small flax egg)

  • 1/2 tbsp canola/veg oil + more for deep frying

  • 1/2 tsp baking powder

  • a small pinch salt (1/8 tsp)

  • 1/4 tsp vanilla extract

  • powder sugar for dusting

  • 1/4 tsp cinnamon (optional)

Tools

  • Small pot for frying your funnel cake

  • A food thermometer

  • A wide tip squeeze bottle or a funnel for dropping your batter into the oil

  • A flat mesh strainer wand or another tool for flipping and removing your funnel cake

  • A couple paper towels

  • A mesh sieve for dusting your funnel cake with powder sugar (optional)

 

Method:

  1. In a small bowl, whisk together your dry ingredients (flour, sugar, baking powder, salt, and cinnamon)

  2. Add the milk in increments and mix. Add the flax egg, oil, and vanilla extract and give it a quick stir to combine. Avoid mixing it too much or the mixture will become too stiff. Pour your batter into a wide tip squeeze bottle, or if you are using the funnel method, just prepare everything so that when it comes time to fry the batter, it'll be easy to pour it through the funnel to fry.

  3. In a small pot, heat at least 4 inches of oil to 365-370 degrees Fahrenheit. When its fully heated and boiling, squeeze/pour your batter into the pretty lattice pattern that's classic to funnel cake. You can have a bit of fun with it and shape hearts! <3

  4. Let fry for 60-90 seconds, flip and fry for another minute or so until it is lightly golden. Remove from oil and set onto a paper towel to drain excess oil. Repeat until all your batter has been used. Dust them with powder sugar, serve, and enjoy!
