Beyond Yummy Vegan GF Yam Coffee Cake

I'm in love! You won't believe that a cake this good could be Vegan and Gluten Free! Its moist, light, and has all those warm must-have fall flavors! It's easy to make and it's perfect or impressing your friends!

Yields: 1 8" x 6.5 inch cake

Quick Notes:

  • I make my own yam puree for this cake! Simply peel, cube, and steam about half a yam for 10 or so minutes (until its tender) and blend it smooth with about 1/4 cup water (or as much as is needed to get it to blend smoothly).

  • The bake time listed below is only for using a 8 inch by 6.5 inch glass baking dish. If you're using a significantly different sized dish, adjust the bake time accordingly. The larger glass dish you use, the less bake time you'll need. For example, for a 9 inch by 11 inch glass dish, try 40-45 minutes and see if a toothpick comes out dry. Keep it in there until it does.

  • This recipe calls for almond flour. Below is the texture you want yours to look like, its a pretty standard grind. A finer or courser grind will work, but this is the ideal:

Ingredients

Dry:

  • 1 cup King Arthur's Gluten Free Measure 4 measure Flour

  • 3/4 cup blanched almond flour (see quick notes above)

  • 1 tbsp ground flaxseed

  • 1/4 cup granulated sugar

  • 2 tbsps brown sugar

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/4 tsp cinnamon

  • 1/4 tsp ginger powder

  • 1/8 tsp nutmeg powder

Wet:

  • 3/4 cup soy milk

  • 1/4 cup yam puree

  • 1/4 cup applesauce

  • 2 tbsps neutral oil (canola/vegetable)

  • 1 tbsp lemon juice

  • 1 tsp apple cider vinegar

  • 1 tsp vanilla extract

Streusel:

  • 1/2 cup brown rice flour (or other GF flour)

  • 2 tbsps brown sugar

  • 3 tbsps granulated sugar

  • 1/4 tsp cinnamon

  • A dash of salt

  • 2 tbsps neutral oil

 

Method:


1. Combine and whisk together your wet ingredients in a medium bowl or stand mixer.

2. In a small bowl combine your dry ingredients.

3. While whisking, add your dry ingredients a small portion at a time to your wet mixture.

4. Preheat your oven to 350 degrees and grease & flour an 8" by 6.5" glass baking dish.

5. Make your streusel: Combine your dry ingredients then add your oil and mix by hand (or spoon) into a crumbly mixture.

6. Pour your batter into the greased glass dish, level it out, and crumble your streusel on the top.

7. Bake at 350 degrees Fahrenheit for 55 minutes, or until a toothpick comes out dry.
