Lemon & Almond Butter Curried Noodles

Almond butter, red curry paste, and lemon! They all make for the perfect nutty, spicy, & creamy combination! This power combo dresses rice noodles beautifully, and served with tofu or chicken and some veg, its almost heavenly! So beautiful, so fresh, and so healthy! This has been one of my favorite dishes lately. Plus, it only takes ~10 minutes to make! Who said you can't eat healthily with a busy lifestyle? Nut-free options available.

Yields: ~2 servings

Quick Notes

  • For a nut-free version, I've used sunflower seed butter which worked beautifully, but Tahini would also be a great substitute!

  • I love to use Lotus Foods brand Millet & Rice Noodles. They're the best ramen style Gluten Free noodles I know of!

Ingredients:

  • Cooked Lotus Foods brand Rice Ramen noodles (or other rice/ramen noodles)

  • 1.5 tbsp creamy almond butter (use creamy sunflower seed butter or Tahini for a nut-free version)

  • 1.5 tbsp red curry paste (I use Thai Kitchen brand)

  • 2 tbsps lemon juice

  • 3.5 tbsps warm water

  • 2 tbsps soy sauce

  • 1/4 tsp fine sea salt

  • 1/4 tsp garlic powder

  • Sliced green onion for garnish (optional)

 

Method:

  1. In a small bowl, mix together the almond butter, water, red curry paste, lemon juice, soy sauce, garlic powder, and salt.

  2. Toss your cooked noodles in the sauce until even.

  3. Serve and garnish with green onion. Enjoy with your choice of vegetables, meat, or tofu!
