Ingredients:

  • 1 pack extra firm tofu

  • 1/2 cup soy sauce (or GF Tamari, if preferred)

  • 1 tbsp agave (or other liquid sweetener)

  • 2 tbsps brown sugar

  • 1 tsp sesame oil

  • 1 tbsp rice vinegar

  • 3 tbsps water

  • 1 tsp ground or fresh grated ginger

  • 1/2 tsp minced garlic or garlic powder

  • 2 tbsps corn starch + 3 tbsps water

Other

  • Sesame seeds & nori for garnish (optional)

Method:

1. Cut the block of tofu into 5 or 6 rectangle slabs. They should be 1/2 inch thick.

2. Lay your cuts of tofu onto a clean kitchen cloth over a cutting board. Paper towels are a fine substitute if you dont have a food-safe cloth. Layer another cloth (or more paper towels) on top of the tofu and rest another cutting board gently over the tofu. To help pull excess water from the tofu, feel free to add a book on top, but be careful not to damage the tofu underneath. We want to dry the tofu, not pulverize it with your encyclopedia collection. Let sit for 20+ minutes while you work on the sauce.

3. In a small saucepan, combine all of yout sauce ingredients except for the corn starch slurry into a saucepan. On medium-low heat, bring the sauce to a simmer to let the sugar dissolve.

4. Give your cornstarch slurry a quick stir and add it to the saucepan. Whisk and let simmer for 3-5 minutes, until the sauce is fully thickened and carries a nice aroma.

5. Preheat the oven to 375 degrees F and line a baking sheet with parchment. Lighly grease the parchment with olive oil or cooking spray.

6. Uncover your tofu and take a piece onto a cutting board. Place a skewer or chopstick along the two longest sides of a tofu steak so they are parallel to each other. Carefully cut diagonal lines across the length of each tofu steak, stopping when you hit the skewer to score them.

7. Place your tofu steaks on your prepared baking sheet, an couple inches apart from each other. Using a basting brush, slather the scored tofu steaks with about 1/2 of your teriyaki sauce, making sure to fill the grooves.

8) In your preheated oven, bake the tofu for 20 minutes, flipping and brushing them with more sauce halfway through. Garnish and serve with extra sauce and enjoy!
